You will not only save your money but help in reducing the amount of rubbish, so win-win situation is definitely guaranteed.

All that you have to do is to get yourself a big zip-lock bag or any other container and store it in your fridge. Every time you cut the vegetables, save their peelings and scraps into your container. It will be great to use onions, celery, stems and stalks of mushrooms and herbs. Avoid using cabbage, broccoli and Brussels sprouts as your broth will have unpleasant smell.

When you have filled up your container, pour all of the ingredients into the big pot, fill the pot with cold water and add some peppercorns, bay leaf and couple of garlic cloves if you like. You have to let the mixture boil for an hour, so soon you should feel the smell of the broth.

After the broth is ready, strain it through the colander and gather it in the big bowl. Discard the garbage because it will be useless already. Store the broth in the jars and freeze it until you need it. And there it is – the broth is ready to be used in soups, mashed potatoes or rice.
